Okay, this is not a pic of my potato salad. But it looked like this minus the green stuff. mine had olives. |
6 - potatoes
3 - eggs
1/2 cup - mayo
1/4 cup - Champagne Caper Vinaigrette or you can just use ranch
1/4 cup - black olives
2tbsp - spicy mustard
1 tbsp - paprika
2 tbsp. Rosemary
salt & pepper
Serving size: 8-10
Boil the potatoes and eggs. Cool and chop.
Mix the mayo, dressing, mustard, salt, pepper, paprika, and rosemary.
Mix the "wet" ingredients with potatoes, eggs, olives.
Chill and marinate for a couple of hours.
Serve cold!
