Mixed Lentil Salad

Since this Exchange supposed to be a healthier one, I decided to make this salad which is very healthy, has so much flavor and pack with protein! Keep in mind that you have to prepare main ingredients in a day or two advance.

Serving: 6

Ingredients:

2 cups sprouted moong, cooked
½ cup dry chana, cooked
½ cup red or green grapes, chopped
½ small onion, chopped
1 small tomato, chopped
Coriander, chopped
Pomegranate (optional)
2-3 tablespoon chaat masala powder
½ cup lime juice
½ teaspoon red chilli powder
Salt to taste

Method:

To make sprouted moong, you will need green moong. Soak green moong in water overnight and next morning wash very good in running water. Drain all water and put in closed container or wrapped in a cloth for 4-5 hours in room temperature. You will see beautiful sprouted moong when you remove from the container. Cook in a pressure cooker with enough water to cover sprouted moong and wait till 2-3 whistles.
To cook dry chana, soak them in a water overnight and next morning wash very good in running water and cook in pressure cooker with equal amount of water as chana until 4-5 whistles.
Mix all ingredients in a large bowl and store in a fridge for couple of hours before serving.
