4th of July Grilled Cheese

Ingredients for apx 6 sandwiches:

  • sourdough bread (or any sliced bread of your choice)
  • 3/4 cup shredded carrots (i bought carrots and shredded at home vs buying them from the grocery store, which tend to be dry and too thick for this sandwich)
  • 1/4 cup diced tomatoes (remove seeds)
  • habenero cheese slices (watch out, these will add some fireworks in your mouth!)
  • purple potato, peeled, sliced 1/2 inch.  (I used about 8 of the fingerling little potatoes)
  • fresh grated garlic
  • black pepper
  • salt
  • your favorite bbq sauce
  1. place the purple potato slices on a lightly sprayed baking dish, toss with 2-3 teaspoons of grated garlic, dash of black pepper and salt to taste. Bake at 350degrees until tender. This didn't take very long. 
  2. mix in a bowl, carrots + tomatoes + 2 tablespoons of bbq sauce (add more to your liking)
  3. cut the sour dough bread into 12 equal slices
  4. create an assembly line of: carrots/tomato/bbq sauce mixture + habenero cheese slices + baked purple potato slices
  5. now build your sandwiches in that order: layer of mixture, 1-2 slices of cheese, few purple potato slices
  6. heat a sauce pan or your griddle
  7. lightly spray with butter or oil, both sides of sandwiches prior to placing in the pan or on the griddle
  8. allow both sides to get golden brown to your liking
  9. enjoy your red, white, blue grilled cheese sandwiches!
