Apple fennel salad



This is my favorite salad at work, and finally dared to make it! Similar to the other salad post (stacked salad), I have to find other ways to make salads.  Although I've enjoyed eating all salad recipes posted on our blog :) Check them out

Here is another very simple recipe.

Ingredients:
3-4 tablespoons apple cider vinegar
1/3 cup olive oil
1-2 teaspoons honey
Juice of 1/2-1 lemon
Pinch salt and black pepper
1 red delicious apple (or any you fancy), quartered and thinly chopped
1 medium fennel bulb, shaved
roughly chopped fennel greens off the stems of the fennel bulb

1) Whisk in a large bowl or salad container: apple cider vinegar, olive oil, honey, lemon juice, salt and black pepper
2) add apple, fennel, and greens....and coat evenly
3) Add any of the "dressing" ingredients to elevate zing/tart to your taste

Note: salad tastes great before serving, but even better if made 2 hours prior or night before!
