Spinach Salad with Chocolate Vinaigrette!

A refreshing crisp salad that is good for all seasons...with a chocolate twist!

Ingredients

For vinaigrette

1 tbps cocoa powder
1 tsp sugar
1/2 cup balsamic vinegar dressing (recommended : Newmans Own)

Apple fennel salad



This is my favorite salad at work, and finally dared to make it! Similar to the other salad post (stacked salad), I have to find other ways to make salads.  Although I've enjoyed eating all salad recipes posted on our blog :) Check them out

Here is another very simple recipe.

Ingredients:
3-4 tablespoons apple cider vinegar
1/3 cup olive oil
1-2 teaspoons honey
Juice of 1/2-1 lemon

Stacked Salad

I'm not good at making salads, and they always taste better when someone else makes it. Enjoy this twist on a salad.

Ingredients:

- Alfalfa sprouts
- Sliced Cucumber, not too thin
- Hummus (follow this exchange recipe) and add jalapenos (pickled or raw), as much or as little to your liking
- Green apple, Sliced Into bite sized pieces 
- Balsamic vinegar
- Wheat thins (any flavor)

Asian Salad


Yields 6-8 servings
  • ¼ cup bok choy (Chinese cabbage)
  • ¼ Radicchio (or purple cabbage)
  • 1 cup any lettuce, mixed greens (chopped)
  • 1 cup grated carrots
  • ½ cup edamame
  • 1/4 cup bean sprouts (adjust amount to suit your taste)
  • ¼ cup peanuts (chopped)

Beet & Goat Cheese Salad


Ingredients

  • 3 medium beets, red and golden
  • 1 tablespoon olive oil
  • 10 ounces mixed baby greens
  • 3 ounces goat cheese, crumbled
  • 1 cup walnuts
  • 2 tablespoons raw honey
  • 1 1/2 tablespoons Dijon mustard
  • 3 tablespoons balsamic vinegar
  • 1/2 teaspoon kosher or sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 6 tablespoons extra-virgin olive oil

Strawberry Spinach Salad

Ingredients
2 tablespoons sesame seeds
1 tablespoon poppy seeds
1/2 cup white sugar
1/2 cup olive oil
1/4 cup distilled white vinegar
1/4 teaspoon paprika
1/4 teaspoon Worcestershire sauce
1 tablespoon minced onion
10 ounces fresh spinach - rinsed, dried and torn into bite-size pieces
1 quart strawberries - cleaned, hulled and sliced
1/4 cup candied pecans, blanched and slivered

Mixed Lentil Salad

Since this Exchange supposed to be a healthier one, I decided to make this salad which is very healthy, has so much flavor and pack with protein! Keep in mind that you have to prepare main ingredients in a day or two advance.

Serving: 6

Ingredients:

2 cups sprouted moong, cooked
½ cup dry chana, cooked
½ cup red or green grapes, chopped
½ small onion, chopped
1 small tomato, chopped
Coriander, chopped
Pomegranate (optional)
2-3 tablespoon chaat masala powder
½ cup lime juice
½ teaspoon red chilli powder
Salt to taste

Barley Salad with Grapes and Walnuts

I borrowed this recipe from Weight Watchers. The main thing i changed was the nut - i used Walnuts, the recipe called for Pecans. I'm sure either would work.  OH- i didn't have tarragon, so i skipped that.
