Chimichuri


Chimichuri

1 bunch of fresh flat-leaf parsley
1 bunch of fresh cilantro
¼ of a bunch of fresh oregano
3 tablespoons balsamic vinegar
10 garlic cloves
1 jalapeƱo or 3 searno pepper or Red pepper flakes to taste
½ cup plus extra-virgin olive oil
½ tsp Salt and black pepper (to taste)

Spinach and Avocado Panini



Ingredients:
Ripe avocado – you won’t need the whole if you’re making just one sandwich.
Handful of baby spinach
American cheese
Goat cheese (mine had olives in it)

Sazon Chicken Pasta


These measurements are estimates. I really love garlic, so i probably added twice what i suggested. It's your meal, season it the way YOU like it versus what the recipe calls for. Enjoy!  

 Ingredients 
 Bow tie pasta or your preference
1lbs of chicken breast/thigh (boneless)
1 Green and/or Red pepper
1 Onions
½ pack Mushrooms
1 can of Artichoke
1 Green cubanelle
¼ can Banana Peppers
4 Fresh garlic cloves
2 tbsp Olive Oil
1 Lemon

Chicken Lettuce Wraps




Chicken lettuce wraps

1lbs ground chicken
1 can of chipotle peppers in adobe sauce – you will only need 1 pepper
2 tbsp of Chili and Lime seasoning – if you do not have use ½ tbsp of lime juice, and ½ tbsp of chili powder or to taste
1 medium onion
Salt and pepper to taste
Butter lettuce

Directions:
SautƩ chopped onions until translucent
Add in ground chicken, chipotle pepper, chili and lime seasonings, and salt
Cook the chicken and break it up as cooking with a flat spoon
Make sure chicken is thoroughly cooked and sever on butter lettuce
You can use a variety of different topics such as sour crĆØme, guacamole, and salsa

Clean drink




 

 
 Ingredients
1 cup water
1 cup coconut water
1 tbsp chia seeds (soak for 15 min in water)
Handful of blueberries
Juice of 2 limes
 
 Method
Once the chia seeds are soaked, add water, coconut water, blueberries, and lime juice

Rim your glasses with coconut to be fancy.

Serve cold 

We wanted to start this new year clean, so we made a virgin drink. By the end of January you bet i'll be adding Vodka to this drink. If adding Vodka, add about 2oz.

Bombay Sandwich


Ingredients:

  • Sliced bread
  • Butter or margarine (only if grilling)
  • ½ cup Mint-Coriander Chutney
  • ½ cup of Sriracha - or your own spicy garlic chutney
  • 2 large potatoes boiled, peeled and sliced thick
  • 1 cucumber sliced thin
  • 2 tomatoes sliced thin
  • 1 red onion sliced thin in rings
  • 1 tsp Chaat Masala (available in most Indian grocery stores)
  • Any kind of shredded cheese (optional)

  1. spread the mint-coriander chutney on one side of one bread,
  2. layer potatoes, cucumbers, tomato, and onion
  3. between each layer of vegetables sprinkle some chatt masala
  4. sprinkle some cheese if desired on top of the veggies
  5. spread sriracha on a slice of bread and cover the sandwich with the sriracha side down
If grilling, repeat the steps above but also butter the sides that will be toasted.

Masala Burger



Ingredients:
1lb of ground chicken (or turkey or beef)
1 CGG cube or 1 tbsp of chili, 1tbsp of ginger, 1 tbsp of garlic
1 medium onion
½ tbsp of oil
½ tbsp of turmeric
1 tbsp of garam masala (or any meat masala)
Salt to taste (a little more than ½ tbsp)
1 cup chopped spinach

Baked Beans

Serving size: 6

Ingredients:
2 cans pinto beans
1 small onion, diced
2 cloves garlic, minced
1/2 cup molasses
1/3 cup ketchup
1/4 cup firmly packed brown sugar
3 tablespoons maple syrup
1/4 cup low sodium Worcestershire sauce
1 teaspoon paprika or chili powder 
2 teaspoons liquid smoke
1teaspoon ground black pepper
4-5 cups water

Broccoli Cheese Bite

Makes about 30

 Ingredients:
16oz Broccoli
3 eggs
1 cup bread crumbs - I did Italian style
8oz Gouda cheese - I used Boar’s Head Chipotle Gouda Cheese
3 Serrano peppers
Salt and pepper to taste

Chili Paneer


Ingredients
1 pack (12oz) Paneer or Tofu or chicken
3 bell peppers (any color)
1 large onion
3 tablespoon of garlic
3 tbsp ginger
2 tbsp of chili (or to taste)
1/8 cup of rice vinegar
¼ cup of soy sauce
1/8 cup of ketchup
1/8 cup of chili oil (or vegetable or olive oil is fine)
¼ cup of cornstarch (only needed with chicken).
¼ cup of vegetable oil to pan fry
Scallions & cilantro to garnish

CGG Cubes


1 cup of chili
¾ cup of garlic
¾ cup of ginger

Prep them for blending (wash the chili, remove the skin from the garlic and ginger). Blend into a paste (as smooth as possible). You will have more than you need any given recipe. I usually freeze mine in ice cube trays so I can have it ready for the next time I need it. It’s the best trick ever. I swear I am a more efficient cook because of it.

Cannoli Cake


 {I borrowed this recipe from here. I made slight variations}
Ingredients
  • 1 package French vanilla cake mix (regular size)
FILLING:
  • 1 carton (16 ounces) ricotta cheese
  • 1/2 cup confectioners' sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon almond extract
  • 1 teaspoon rum extract
  • 1 teaspoon vanilla extract
 
FROSTING:
  • 2 cartons (8 ounces each) Mascarpone cheese
  • 3/4 cup confectioners' sugar, sifted
  • 1/4 cup whole milk
  • 2 teaspoons almond extract
  • 1 teaspoon vanilla extract
  • 2 tablespoons miniature semisweet chocolate chips

Pan fried Onion Dip


2 large onions
½ teaspoon of chili pepper (you can use cayenne too)
1 teaspoon of salt
1 teaspoon of black pepper
4oz crĆØme cheese
½ cup sour crĆØme
½ cup of mayo
2 table spoon butter

Rudolph's Sunset


4 cups of Orange Juice

1 can of Sprite

1 ½ cup of orange flavored vodka

½ cup of maraschino cherry juice

¼ cup of fresh lemon juice

 

 
 
 
 
Directions:

Mix all the ingredients, stir, and serve. This makes about 8 cups or so.   FYI- there is no such thing as a can/jar of maraschino cherry juice. You have to use the juice from the can of maraschino cherry. Yes, I learnt that the hard way.

Manicotti with Sausage

{ borrowed this recipe from here. I made slight variations}

Fonduta sauce:

  • 3/4 cup milk
  • 1/2 cup heavy cream
  • A few slices of American cheese
  • 1/4 cup chopped fresh basil leaves

Filling:

·         2 tablespoons olive oil, plus extra for drizzling
·         1 pound sweet Italian chicken sausage, casings removed
·         1 large onion, finely chopped
·         4 cloves garlic, minced
·         1 tablespoon of Italian seasoning (Giada would cringe if she knew I used a mix!)
·         salt
·         pepper
·         1/2 cup whole milk ricotta
·         12 manicotti shells
·         1 (26-ounce) jar marinara sauce
 
FOR VEGETARIAN: substitute spinach and mushrooms for sausage.

Red Pepper Jelly:
¾ lbs. of red bell peppers (about 2)
1 habanero pepper
1½ tablespoons of pectin
1 ½ cups sugar
1/3 cup vinegar
½ tablespoon butter
A pinch of salt

Fourth of July Rice Krispies Treats

Ingredients:

- 6 cups Rice Krispies Cereal
- 1 package marshmallows
- 3 TB butter
- Food coloring (red and blue)

Method:
  1. Divide Rice Krispies and marshmallows into three parts.
  2. Put one part of the marshmallows and 1 tablespoon of butter in the microwave for about a minute. Depending on your microwave it might take less than a minute to "melt" them. They should be super soft. Take a large enough bowl otherwise they will overflow.
  3. Remove from the microwave and mix in the blue food coloring first. Then add the cereal to the mixture. Once they are well mixed, put them in a greased tray. Flatten them using a piece of wax paper.
  4. Repeat step 2 and 3. Don't add any food coloring to the middle "white" layer.
  5. Once they layers are all on and pressed, let it set for about 10 minutes before cutting them.
The more food color you add, the brighter it will be. I obviously didn't add enough didn't like the idea of you girls eating too much food coloring. It just doesn't seem natural to eat red and blue treats! Yes, that's why they look like that.
