Queso


Who doesn't love some good melted cheese? aka Queso!  At first, I was a little afraid of how to make this one, but it turned out to be soooo easy.

Ingredients:
- 1/2 cup milk
- 1/2 stick unsalted butter
- 3 TBSP all purpose flour
- equal parts crumbled or shredded (chipotle chedder, queso fresco, reduced-fat creame cheese)
- seeded finely chopped jalepineo
- seeded chopped 1/2 tomato

Pea Pesto Crostini


Ingredients:

1 package frozen peas, defrosted
1 garlic clove
½ cup grated parmesan cheese
Salt
Black pepper
1/3 cup olive oil
Baguette or ciabatta bread
Cherry tomatoes halved

Method:

For the pea pesto: pulse together the peas, garlic, parmesan, salt and black peppers in a food processor. With the machine running, slowly add the olive oil until well combine, about 1-2 minutes. Season with additional salt and pepper if needed. Also, I added a little bit more parmesan cheese then it asked for only because I thought the peas were a bit bitter. I also had to add a pinch of sugar to balance the flavours.

For the crostini: preheat a stovetop griddle or grill pan on medium-high heat. Brush both sides of the sliced bread with olive oil and grill until golden, about 1-2 minutes. Transfer the bread to a clean surface and spread 1-2 tablespoons of the prepared pest on each slice.

Top with tomato halves and serve.

Onion Tart

Ingredients

• 1 cup all-purpose flour
• 1/4 teaspoon salt
• 6 tablespoons unsalted butter, cut into small pieces and chilled (could probably use less butter and a healthier version)
• 5 tablespoons ice cold water
• 4 tablespoons unsalted butter(I used one tablespoon and it was plenty)
• 2 1/2 pounds sweet onions, thinly sliced
• 6 thyme sprigs (or chives or whatever you like with onions)
• 2 tablespoons crčme fraîche (hard to find so use heavy cream with dash of lemon juice)
• Salt and freshly ground pepper
• 1 egg beaten with 1 tablespoon of milk


Preparation 


Make the Dough: 

In a bowl, whisk the flour with the salt. Using your fingers, rub the butter into the flour until the mixture resembles coarse meal. Drizzle the water over the flour and stir gently just until incorporated; gently press to form a dough. Flatten the dough into a disk, wrap in plastic and refrigerate for 1 hour.

Homemade Hummus

When hummus is this easy to make, you'll never want to buy hummus again!

Ingredients
1 (19 ounce) can garbanzo beans, half the liquid reserved
4 tablespoons lemon juice
2 tablespoons tahini
1 clove garlic, chopped
1 teaspoon salt
black pepper to taste
2 tablespoons olive oil
red chili pepper to taste
red pepper flakes to taste

Directions1.In a blender, pour garbanzo beans with reserved liquid,lemon juice, tahini, chopped garlic, salt, & red pepper. Blend until creamy and well mixed.
2.Transfer the mixture to a medium serving bowl. Sprinkle with red pepper flakes and pour olive oil over the top.

I love this recipe because it allows you to get creative and add anything you want. Next time I want to try homemade jalepeno hummus and artichoke hummus (Gee loves artichokes)! Enjoy : )

Vegetable Pastry Puff Bites



Ingredients

1 x box of Puff pastry (find it in the frozen section of the supermarket)
3 x potato's (or more depending on how many people you are making for)
frozen peas
chilli powder
garam masala (can be overpowering so just add a pinch and then taste)
tumeric
salt
lemon
coriander powder
garlic
ginger
onions

Jalpa's recipe: Stuffed RAW red peppers (not baked? you got it!)

- one or two fresh red peppers, cut into slices to create "scoops"
- 1 can baked black beans (rince well, NOT straight from the can), tossed with fresh grated garlic, cumin, 1 small onion diced, and olive oil
- lemony-avacado sauce (smash 2 ripe avacados + 5-6 tablespoons of almond milk + juice of 1 lemon + ground black pepper...mix all together well in a bowl or a food processor)
- seeds from one pomegranate
