Ingredients: Sushi rice, nori, fried tofu, pickled
cucumber and asparagus, topped with cilantro spicy mayo
Sushi rice:
Ingredients: 1) Cup of short grain
Japanese rice, usually says "sushi rice" on the bag. 2) seasoned rice
vinegar mixture 3) water
- for every 1 cup of rice, you'll need
1 1/4 cup water. Cook rice thoroughly. While its hot, sprinkle 1.5 tablespoon
of seasoned rice mixture. Let the rice
cool to room temperature, you could use a fan to speed up the process. Cover
with a wet paper towel to prevent drying
Creamy green "spicy mayo":
Ingredients: 1 bunch of fresh cilantro, 4 garlic cloves, 4-5
green chillies depending on your taste, salt, dash of black pepper, 1
tablespoon lemon juice, 4 tablespoons sour cream, 2 tablespoons water
- everything in a high power blender to get a creamy consistency
Tofu:
-fried tofu - cut a 1/4 of a typical extra firm tofu block into
bite size cubes and drop in a small sauce pan with 2 tablespoons of oil. While
its cooking, drop in 3 tablespoons of the green spicy mayo, coat
completely... And let it cook for 15 minutes. Let it cool to room temperature.
Asparagus
and cucumber
-cut baby asparagus into 2 inch pieces. Lay out in a baking
tray, sprinkle with salt +pepper... Pop in 350degree oven for 20 minutes. Let
it cool to room temperature.
-julienne cucumber into 2 inch sticks (remove seeds)
- bring cucumber+ roasted asparagus in a mixing bowl, toss with
1 tsp cumin powder, black pepper, and 2 tablespoons of lemon juice... Coat
well. This is my "pickled cucumber and asparagus"
Roll:
-spread out a thin layer of rice on a sheet of nori (I placed
the nori sheet on top of a sheet of clear plastic wrap, both on top of a sushi
mat), you'll need a bowl of water so the rice doesn't stick to your fingers...
In the center, create two parallel lines with pickled cucumber+asparagus and
fried tofu... Now roll baby roll. Cut into desired sizes. Add a small or big
dollop of green spicy mayo!
