Vegetarian Stuffed Peppers

So delicious and healthy! A very versatile dish, you can use any variety of ingredients to stuff the peppers with, but be sure to try this recipe ladies =)

Ingredients

6 large sweet peppers
2 cups cooked brown rice
3 small tomatoes, chopped
1 cup frozen corn, thawed
1 small sweet onion, chopped
1/3 cup canned black beans, rinsed and drained
4 fresh basil leaves, thinly sliced
3 garlic cloves, minced
salt
pepper
3/4 cup meatless spaghetti sauce
Red marchu - add according to taste

Method

Preheat oven to 350 degrees. 
Cut the tops off peppers and remove seeds, set aside.
In a large pan, add a dash of oil and saute the minced garlic. Combine the cooked rice, tomatoes, corn, onion and beans. Stir in the basil, salt, pepper and marchu. Spoon into peppers.

Place the peppers in a baking dish and cover with foil.
Let it cook for 1 hour or until pepper is soft and tender.

In the meantime, I made a marina sauce for topping.
In a small bowl, add marina sauce, fresh basil leaves, oregano, cayenne pepper, black pepper, salt, cilantro. Mix well. Heat before serving and top on the peppers.

When peppers come out of the oven, I topped it with some light kraft shredded cheese. (optional) Cover with the foil for 1 minute until cheese melts.

  1. these were delish... the peppers stayed firm which was a good learning for me. I've made these once and the peppers got soggy. Thanks Vai.. will have to try this recipe.
