Chicken Satay with Peanut Sauce

Ingredients

Chicken Breast (Boneless & Skinless)
Peanut butter (crunchy or smooth)
Soy sauce
Fish sauce
Minced garlic
Minced ginger
Onions
Red pepper flakes
Lemon juice
Lilu marchu
Brown sugar (or white if you dont have brown)
Bamboo skewers

Method

For 4-5 people you will need 3 chicken breasts.
Cut chicken breasts sideways so you get 2 flat pieces. If the pieces are thick you can use a meat tenderizer to flatten them.
Once flat, cut long strips and poke a skewer into them.

For the peanut sauce, get a wide blender and add 4-5 tablespoons of peanut butter. Depending on how much you are going to make you can add more or less.
Few splashes of soy sauce
A splash of fish sauce
Teaspoon of garlic and ginger
Teaspoon of lilu marchu
Half a small onion
Splash of lemon juice
Teaspoon of sugar
Pinch of red pepper flakes.
Add water to get smooth consistency and blend well. The mixture should be thick but runny

Marinate the chicken skewers in the peanut sauce and refrigerate until time to grill. Take out side of peanut sauce before marinating for dipping.

There is really no exact measurements and i just taste as i go along. End result should be sweet, spicy with a little tang.
