Chaat house roll

Ingredients: sushi rice, nori, julienned cucumber, chick peas and seasoned mashed potato, topped with raita

Sushi rice:
Ingredients: 1) Cup of short grain Japanese rice, usually says "sushi rice" on the bag. 2) seasoned rice vinegar mixture 3) water

- for every 1 cup of rice, you'll need 1 1/4 cup water. Cook rice thoroughly. While its hot, sprinkle 1.5 tablespoon of seasoned rice mixture.  Let the rice cool to room temperature, you could use a fan to speed up the process. Cover with a wet paper towel to prevent drying
Raita:
Ingredients: 1/2 cup plain yogurt, 1/4 cup sour cream, 1/2 cup of shredded cucumber (squeeze out some water if you can), 2 cloves grated garlic, salt, 3 finely chopped or ground green chillies
-mix all ingredients in a mixing bowl and cool in refrigerator until ready to serve
Creamy green "spicy mayo":
Ingredients: 1 bunch of fresh cilantro, 4 garlic cloves, 4-5 green chillies depending on your taste, salt, dash of black pepper, 1 tablespoon lemon juice, 4 tablespoons sour cream, 2 tablespoons water
- everything in a high power blender to get a creamy consistency
Cucumber and chick peas:
-julienne cucumber into 2 inch sticks, set aside
-simmer 1/2 can of chick peas over low heat with diced onions, cumin, black mustard seeds, lemon juice, red chilli powder, salt, dash of garam masala powder.
Simmer for 20 minutes until tender. Let it cool to room temperature.

Mashed potatoe
- boil 1 medium potato, cook until completely tender, mash to a creamy consistency with 2-3 tablespoons of cilantro spicy mayo. Let it cool to room temperature.

Roll:
-cut the nori sheet into 2/3 of its size
-spread out a thin layer of rice on ½ of the nori (I placed the nori sheet on top of a sheet of clear plastic wrap, both on top of a sushi mat)... Overlap with the rice, a thin spread of mashed potatoes to fill the other ½ of nori
-you'll need a bowl of water so the rice and potato don’t stick to your fingers...
-In the center where the rice and potato overlap, create two parallel lines with chick peas and cucumber. Now roll baby roll. Cut into desired sizes. Add a small or big dollop of raita on top!
