BBQ Chicken Flatbread


Chicken breasts
Chipotle peppers
BBQ Sauce
Feta Cheese
Smoked Gouda Cheese
Cherry tomato
Whole wheat flat-bread


First slice the chicken breasts thin widely. (Approx 2 breasts for 4/5 people)
Try to marinate the night before (its ok if you dont) in vegetable oil, minced garlic, salt, blended chipotle pepper paste.

On the day of, grill the chicken breast until cooked and then baste again with the chipotle sauce (this is optional but I feel it gives the chicken more flavour and extra kick if you like it spicy)
Chop the grilled chicken into small bite size pieces and put aside.

Preheat oven to 350 degrees Fahrenheit.
Place flat-bread in the oven until golden brown and crispy.

Once its crispy, take out of the oven and now assemble like a pizza.
Spread the BBQ sauce on the bottom and then add the chicken pieces, diced onions, diced cherry tomato, shredded smoked Gouda cheese and feta (be careful with the feta as it has very strong taste so put sparingly) You can always substitute the cheese with your favourite cheese but the Gouda and feta is a great combination!

Bake in the oven until the cheese has melted,

Garnish with chopped cilantro, Enjoy guys!
