Fajita size tortilla's
refried beans
capsicum (green/red pepper)
jalpenos (optional)
taco shredded cheese
taco seasoning

Warm up the beans in a pan and add some taco seasoning (this is optional, its good without the seasoning too)
Dice finely the onion, capsicum and jalpenos
Take out a tortilla and spead a layer of the beans, then add a layer of the vegies and top off with cheese. Place the 2nd tortilla on top and grill on a non stick pan until brown and the cheese is melted.

There is no need to spread butter on the tortilla to grill if you are using a non stick pan, more healthy that way too!

Cut into 4 pieces

Serve with salsa/sour cream/guacamole
