Spinach Salad with Chocolate Vinaigrette!

A refreshing crisp salad that is good for all seasons...with a chocolate twist!


For vinaigrette

1 tbps cocoa powder
1 tsp sugar
1/2 cup balsamic vinegar dressing (recommended : Newmans Own)

For salad

A bag of baby spinach
Diced fresh or frozen mango pieces
Dried cranberries
Chopped walnuts
Grilled peanut sauce flavored chicken pieces (optional)


In a bowl, whisk together the dressing, cocoa and sugar. Should have a sweet/tangy flavor. Set aside.

When ready to serve, put spinach, cranberries, walnuts, mango pieces and chopped chicken all in equal portions in the dish. Drizzle with the dressing.

This salad is great as an appetizer, side salad to the main dish or just as a healthy snack! Enjoy this guilt free salad!
